2019 Petit Chablis
Olivier Savary
This delicious white offers refreshment, with wholly original flavors. Lemon zest, star fruit, wet stone, and white flowers all coat the palate in a bonedry, vitalizing, and immensely enjoyable wine. Picture yourself savoring a glass to stimulate your taste buds as you prepare a meal, perhaps with some antipasti, the way you’d enjoy Fontsainte’s Gris de Gris, for example.

2023 Mercurey Rouge “Les Montots”
France | Burgundy
The finesse of the nose alone is somewhat overwhelming. This wine consistently impresses. It truly has it all.
2023 Savigny-Lès-Beaune 1er Cru “Aux Serpentières”
France | Burgundy
A classic vintage that’s tart, earthy and generous; it’s beaming with pleasure and would be well worth cellaring, too.
2023 Gevrey-Chambertin “Les Evocelles”
Domaine Lucien Boillot et Fils
France | Burgundy
Pierre Boillot is a master of terroir-driven red Burgundy.
2023 Fixin “Crais de Chêne”
France | Burgundy
Fixin is known as the “rustic cousin” to Gevrey-Chambertin, but Bouvier’s Crais de Chêne is refined and easy to adore.
2021 Marsannay Blanc “Clos du Roy”
France | Burgundy
I find the Clos du Roy blanc to be quite versatile at my house in Meursault, especially with fowl, pork, and veal.
2023 Santenay Blanc 1er Cru “Le Beaurepaire”
France | Burgundy
From Santenay’s highest-altitude premier cru, this rare white is not to be missed. Enjoy this masterpiece over the next fifteen years.
2022 Pernand-Vergelesses 1er Cru “Les Fichots”
France | Burgundy
With plush notes of red fruit and cocoa abounding in the glass, this Pernand punches way above its weight.
2023 Givry Rouge 1er Cru “La Brulée”
France | Burgundy
Forward ripe berry fruit aromas and a velvety finish.
2023 Gevrey-Chambertin 1er Cru “Les Corbeaux”
France | Burgundy
Of all Boillot’s cuvées, the ones from Gevrey-Chambertin are the most brooding, the most earthbound.
2022 Givry Blanc 1er Cru “Crausot”
France | Burgundy
With aromas of apple blossom and marzipan, this Chardonnay is hard to resist on its own, but would be the perfect accompaniment to a semi-hard cheese like comté or baked steelhead trout.
About The Producer
Famille Savary
The Savarys have earned the recognition for their hard work, and are highly regarded in the appellation. The clay-limestone hillsides of the Kimmeridgian chain are excellent for growing dazzling, complex Chardonnay. However ideal the soil, Olivier brings his own brilliance to the table. The grapes from his vineyards throughout the Chablis appellation are blended into one fabulously complex village wine cuvée. He also bottles an extraordinary premier cru from Fourchaume, as well as a separate cuvée of old-vine fruit in heavy, wax-sealed bottles after élévage in demi-muid. These exquisite wines are quintessential Chablis, with unmistakable aromas of ancient crushed shells and a pronounced, racy mineral structure.
About The Region
Burgundy
In eastern central France, Burgundy is nestled between the wine regions of Champagne to the north, the Jura to the east, the Loire to the west, and the Rhône to the south. This is the terroir par excellence for producing world-class Pinot Noir and Chardonnay.
The southeast-facing hillside between Dijon in the north and Maranges in the south is known as the Côte d’Or or “golden slope.” The Côte d’Or comprises two main sections, both composed of limestone and clay soils: the Côte de Nuits in the northern sector, and the Côte de Beaune in the south. Both areas produce magnificent whites and reds, although the Côte de Beaune produces more white wine and the Côte de Nuits more red.
Chablis is Burgundy’s northern outpost, known for its flinty and age-worthy Chardonnays planted in Kimmeridgian limestone on an ancient seabed. Vézelay is a smaller area south of Chablis with similar qualities, although the limestone there is not Kimmeridgian.
To the south of the Côte de Beaune, the Côte Chalonnaise extends from Chagny on its northern end, down past Chalon-sur-Saône and encompasses the appellations of Bouzeron in the north, followed by Rully, Mercurey, Givry, and Montagny.
Directly south of the Chalonnaise begins the Côte Mâconnais, which extends south past Mâcon to the hamlets of Fuissé, Vinzelles, Chaintré, and Saint-Véran. The Mâconnais is prime Chardonnay country and contains an incredible diversity of soils.
