If you can forgive the cliché, picture a cozy Parisian eatery tucked away on a narrow street where the menu — a chalkboard mounted to the back wall ­— has its prix-fixe options scribbled hastily in white script. Under the three headers — entrée, plat, dessert — you might be able to make out a few classics like foie gras maison, steak tartare, poulet frites, and a perfectly ripened cheese course. The carte des vins will list a friendly selection of wines from real vignerons whose familiar names will make you feel right at home. In celebration of this type of establishment that we’re missing so much these days, we’ve put together a sampler to bring the bistro chez toi
           What is a bistro wine? While there’s no one type, it’s typically made in a certain style: naturally, with a sense of place, and meant to inspire generosity, friendship, and thirst. In this homage pack we’ve included two crystalline whites perfect for accompanying stacked trays of oysters, escargots, or toasts topped with salmon rillettes. Eric Chevalier’s Val de Loire, a rare find from Muscadet made from the nearly extinct Fié Gris, is an exotically scented dry blanc that marries herbaceous notes with orchard fruits, while “Les Angelots'' from Valentin Montanet in Vézelay is a lively, unoaked Chardonnay that makes drinking white Burgundy feel fun and carefree.  
           In the way of reds, we’d be remiss not to include cuvées from veteran winegrowers Catherine and Pierre Breton, and Michèle Aubery of Domaine Gramenon. Breton’s Bourgueil “Trinch” is a bright, peppery Cabernet Franc that’s playful and direct, while Gramenon’s “La Belle Sortie” lovingly blends whole bunches of Syrah and Grenache for a Côtes-du-Rhône that’s deliciously soulful and electric in its youth. Maxime Magnon’s “Rozeta,” a field blend from the remote Corbières countryside, may be a new discovery for some or a longtime love affair for others. Either way, I promise this vintage will make you swoon. And lastly, the “Cuvée Piverts” from Grégoire Hubeau is a soft, supple Merlot whose seductive fruit will have you wondering why you don’t drink Bordeaux more often. All of these wines are from producers who are practicing organic or biodynamic, are made with little to no sulfur, and will leave you fantastically satiated.
