Any mention of the south of France and it’s likely the quintessential lavender fields of Provence, or the pebbly beaches of the Côte d’Azur that spring to the imagination. Celebrated wine appellations like Bandol and Cassis may come to mind (as they should!) but it’s high time we recognize and celebrate a most thirst-inspiring swath of le sud that’s too often overlooked: the Languedoc. Tucked away on the Mediterranean like a hidden cul-de-sac, the winemaking region of the Languedoc lies roughly between Perpignan to the west and Arles to the east and is home to a vanguard of some of the most committed and passionate growers in our book. 
         To highlight what we love about the Languedoc, here are four producers whose thoughtfully grown wines showcase an unassuming side of the south that you won’t recognize from any postcards. You’ll taste veteran vigneron Pierre Ravaille’s “Tour de Pierre,” a lush and limber blend of Syrah, Grenache, and Mourvèdre that threatens to steal your heart—and a spot among your go-to reds. Grab a decanter, and spend some time contemplating and getting to know the dark and brooding Clos Serre-Cabanis from young newcomer Ludovic Engelvin, whose potential for stardom at this stage in his career feels infinite. We’ve included a sumptuous and saline Saint-Chinian blanc from the limestone-laden vineyards of Isabelle and Mathieu Champart, which blissfully marries sun and stone. Lastly, where would we be without the living, breathing wines of fifth-generation winemaker Sylvain Fadat? His Lou Maset rosé from his native Montpeyroux closes the case on whether or not rosé can be enjoyed all year round (the verdict is yes).

For the wines that I buy I insist that the winemaker leave them whole, intact. I go into the cellars now and select specific barrels or cuvées, and I request that they be bottled without stripping them with filters or other devices. This means that many of our wines will arrive with a smudge of sediment and will throw a more important deposit as time goes by, It also means the wine will taste better.
