Artisanal red Vermouth di Torino, like Bèrto’s, is always made from a secret family recipe. This version draws from a discreet combination of zesty and bitter raw ingredients like orange peel, gentian root, ginger, rhubarb, cardamom, and, of course, wormwood—by tradition, Vermouth’s star aroma. All of these herbs and fruit, sourced locally or from the distillery’s own farm, infuse before being pressed and added to a base of dry wine with a dose of sugar and alcohol. At aperitivo hour, I like mine on ice with just a splash of sparkling wine or soda and a twist for a stimulating, low-ABV weeknight cocktail.
