Patricia and Luc Bettoni, the charming couple behind Les Eminades, fashion their wines from biodynamically farmed old vines in cool pockets of the Saint-Chinian appellation. Their philosophy of protecting the grapes from the most searing rays of summer’s sun and wielding a gentle hand in the cellar allows them to capture delicate fruit and a pure expression of grape and terroir. They have mastered a style that is all too rare in the south, characterized by vivid aromatics and satiny textures that caress the palate. 2021 Saint-Chinian Blanc “Montmajou”
