If your evenings are like mine, you or your dinner companion will inevitably ask the other what to do for dinner. After floating the names of a few delivery spots, scanning the shelves of an open fridge for some fresh and inspiring produce, or sifting through the pantry in search of the perfect dried good—beans, pasta, or a tinned fish—you successfully settle on a tasty game plan. And then comes the follow-up question, “So what should we drink?” If this dinnertime dance sounds familiar, the assortment of wines in this sampler will ensure you have swift and stimulating solutions every time. Included are a dozen reds that fall into the three categories of light, medium, and full-bodied; from silky and bright to dark and rustic, and everywhere along the colorful spectrum in between.
     On the lighter end, we’ve included peppery reds like Pascal Janvier’s watermelon-hued Pineau d’Aunis and Anfosso’s plummy, brick-red Rossesse. Both are great options when forgoing the main course in favor of a long apéritif—think creamy, pungent cheeses, plump salumi, or crusty bread with olive oil and anchovies. Dupeuble’s vivacious Nouveau, a baby Gamay with hardly any tannin, would be equally great here. Such juicy, weightless reds, served chilled, are perfect when enjoying foods that merit some extra palate cleansing.
    In the mid-weight range, you’ll find reds with the greatest versatility, as confident alongside pizzas and burgers as they are with any pasta or other comfort foods. They seamlessly balance structure with drinkability, as you’ll see with Château Aney’s perfectly mature 2012 Haut-Médoc. You might expect brawn from this Cabernet-Merlot blend from Bordeaux, but time has buffed its edges, transforming it into a more delicate version of itself and one that’s eager to please.   
     We’ve also got you covered with a few dense, chewy reds for when the mood strikes. Mourvèdre-based rouges like Mas Champart’s “Simonette” or Terrebrune’s sanguine Vin de Pays would be perfect alongside charred poultry, fish, or red meat—maybe a fat-capped ribeye with rosemary potatoes. If you have the ingredients on hand, Riofavara’s Sicilian “Sciavè”—an inky Nero d’Avola that exudes baking spice and licorice—might just inspire you to whip up a lamb tagine or a decadent caponata. But most importantly, while these three categories provide a framework in guiding you towards your perfect match, consider them mere suggestions.
